A Favorite Recipe

With winter in full swing in Michigan who doesn't love to be snug inside with the smells of cinnamon and spices wafting through the house? This recipe for a baked oatmeal is perfect for those frigid mornings and healthy enough if you forgive the stick of butter to be enjoyed by everyone. Originally not my recipe I have adapted it here to include little extras that I know will have you making it over again and again. Its a favorite in my kitchen and in my stomach as well!
Baked Breakfast Oatmeal

3 c. dry oatmeal (not instant)
1 c. milk
1/2 c. butter
1 c. brown sugar
2 eggs
1 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
½ TSP nutmeg
¼ TSP. cloves
½ TSP ginger (optional)
1 tsp. vanilla
1 ½ c. raisins, dried cranberries, diced green apples, or blueberries
1/2 c. nuts (almonds, cashews, pecans, or walnuts)

Preheat oven to 350 degrees. Melt butter. Stir in brown sugar, vanilla and eggs. Add oats, raisins, berries, apples or nuts, and dry ingredients. Stir in milk. Pour into buttered
8 inch square pan. Bake for 20-25 minutes or until firm in center. If a thinner mixture is desired remove pan from oven when edges of the oatmeal are firm and the top is just brown.
