Summer Salad

another favorite recipe of mine.

Warm Chicken Walnut Salad

Chicken breasts cut into strips are skillet-cooked in prepared Italian salad dressing mix, then combined with salad greens, dried cranberries, walnuts,
and blue cheese, and drizzled with the remaining dressing.

Ingredients:

• 1 envelope Italian Salad Dressing Mix
• 4 boneless, skinless chicken breast halves (about 1-1/4 lb.), cut into strips
• 1/2 cup dried cranberries
• 1 pkg. (10 oz.) salad greens or baby spinach
• 1/2 cup chopped Walnuts, toasted
• 1/2 cup crumbled Blue Cheese (optional)


Prepare salad dressing mix as directed on package. Cook chicken in 2 Tbsp. of the dressing in large skillet on medium-high heat 8 to 10 minutes or until
cooked through. Add cranberries; heat through. Place greens in large salad bowl; add chicken mixture toasted nuts, and blue cheese, if desired. Drizzle
with remaining dressing. Toss. Serve immediately.
